honey joys

If you have kids or were a kid yourself then this is something that may bring up a few memories of birthday parties and school fetes where someone’s mum brought along a plate of honey joys that sat alongside plates of chocolate crackles, party pies and fairy bread.


ingredients


  • 6 tablespoons of pure honey (Two Creeks of course!)

  • 100 grams butter

  • 5 cups cornflakes

  • Crushed nuts or Sesame seeds to spread on top

  • 24 paper cup cake cases



method


  • Preheat oven to 160°C

  • Add the cornflakes to a large mixing bowl

  • Melt honey and butter in a large saucepan on high heat until frothy, stirring continuously to prevent burning the honey

  • Remove from heat and pour the syrup over the bowl of cornflakes

  • Mix well but gently until the cornflakes have all been coated in the honey butter syrup

  • Spoon into cupcake cases and sprinkle with nuts or sesame seeds

  • Place on an oven tray and bake for 10 minutes. Allow to cool and harden in refrigerator for 30 minutes.


Then eat them like there’s no tomorrow… its hard to stop at one.
